I really enjoy her blog, she has a lot of great recipes. I grew up eating duck we hunted, and can’t imagine eating farm-raised ducks from the store. Diving ducks have a strong swampy flavor and need more dressing up than your dabbling ducks.
I have several standard recipes but always like trying something new. A lot depends on whether you’re eating dabblers or divers. Wood ducks are not common here, so I don’t know what they taste like. A few years ago I was talking to hunters that were shooting mud hens (coots) and making jerky out of them. No thanks, they’re not called mud hens without reason.
